One of my challenges this year was to eat a bit more locally. That said, I love some products that we can’t grow in Canada, so I try to balance it all by eating more of our seasonal fruits and veggies and enjoy imported products as well because I just find exotic products delightful, but you already knew that :)
In february, I wanted to rediscover the beetroot, a veggie that I ignored for so long (if not always). Nothing beats beets (heh) and I found a fun way to add a portion of veggies in your breakfast. Beetroot leaves behind a hint of its graceful sweet taste and, paired with maple syrup or honey is simply amazing. I particularly love the 3 acres summer honey for this recipe, it balances perfectly with the beet I find.
Beets for breakfast aren't only a tasty option, but it has powerful antioxidant properties and numerous vitamins. Sweet and naturally colored for the pleasure of the young ones (and not so young ones). My children loved them, some were eaten straight while others with maple syrup. We already want more.
